To scale any recipe, you must first determine your exact multiplier. This is known as the Scale Factor. The formula is incredibly simple but frequently executed backwards by amateur cooks:
If a cookie recipe makes 24 cookies (Original Yield) and you need to bake 60 cookies for a party (Target Yield), you divide 60 by 24. Your Scale Factor is 2.5. You then take a calculator and multiply every single ingredient in the original recipe by 2.5.
When multiplying a recipe by a large scale factor (anything above 3x), you must stop scaling spices linearly. Salt, pepper, cayenne, and chemical leaveners (baking soda/powder) become exponentially overpowering at high volumes. As a rule of thumb in professional kitchens, if you multiply a soup by 4x, you only multiply the salt by 2x or 3x, and adjust to taste at the very end.
